Ingredients:

  • 3 tbsp sugar
  • 1 tsp cinnamon
  • 1 cup sugar
  • 1/2 cup canola oil
  • 4 eggs
  • 1/4 cup orange juice
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 1 1/2 cups whole wheat flour
  • 1/2 tsp salt

Directions:

  1. Mix apples, 3 tbsp sugar and cinnamon. Set aside.
  2. Combine sugar and oil in large bowl. Beat. Add eggs, orange juice, and vanilla.
  3. Sift together flour, baking soda, and salt. Add to creamed mixture.
  4. Add one third creamed mixture to a floured 12 cup pan. Add half the apples. Add another third of the mix, then rest of apples. Finish with remaining third of mix.
  5. Bake at 325 for 60 minutes
  6. Cool in pan 10-15 minutes.
  7. Turn out onto cooling rack to finish cooling.
  8. Sprinkle with confectioner's sugar.
