Ingredients:

  • 3/4 cup butter
  • 2 eggs + 1 egg
  • 2-1/2 cups all-purpose flour
  • 3/4 cup milk
  • 1/2 cup raisins , soaked in whiskey or you can even substitute candied orange peel or cherries or cranberries...
  • note: sometimes i add the whiskey that the raisins have been soaking in and omit the lemon extract.
  • 1/2 tsp lemon extract
  • 1/4 tsp cardamom ( you can add more , it depends on your personal taste)
  • i make a simple glaze to drizzle over the top.

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease an 11 inch loaf pan.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each egg.
  5. Stir in the milk, lemon(or Whiskey) and cardamom.
  6. Mix in the flour and baking powder.
  7. If you prefer raisins that have not been re-hydrated, I suggest that you sift a little flour over the raisins then stir them into the batter. Otherwise, I just add the plumped up raisins as they are.
  8. Pour the batter into the prepared pan.
  9. Bake at 350 degrees F for 55 to 60 minutes.
  10. 8 to 10 slices
