  1. The first step is to prepare the caramel. Melt the sugar in a medium size pan over medium heat until it dissolves and turns golden. While it is doing this heat the cream till warm and slowly add this into the golden melted sugar. Stir this with a wooden spoon until it is all creamy and all lumps are gone. Melt the chocolate over a double boiler until it is smooth. I use a glass bowl over a pan of hot water on a low simmer. Stir until melted and pour into candy molds. Round deep ones are best for this.Shake out any excess chocolate and chill this until set and add the caramel, about 1 tbs to
  2. Each candy. chill, and cover with more chocolate and level off the tops and when cooled several hours to overnight unmold with a quick rap on the counter with the mold. They should just pop right out. People will adore you and these. I put these into small wrappers.
