Ingredients:

  • 1 cup= or 2 sticks butter
  • 2 cups water
  • 2 tsp. sugar
  • 2 tsp. salt
  • 1/2 tsp. cayeene pepper
  • 2- to 2 1/2 cups all purpose flour
  • 10 oz shredded sharp cheese- want them hotter use 1/2 part pepperjack cheese shredded
  • equal to amount of 3 cups all together
  • 6 eggs

Directions:

  1. Combined: water butter sugar and salt and cayenne in large saucepan cook till butter melts. add 2 cups flour all at once reduce heat stir constantly with wooden spoon 1 minute. Pour into mixing bowl using a mixer with paddle attachments beat 1 minute on low speedto cool mixture increase speed to medium add eggs 1 at a time beat mix well before adding the next.Batter should be firm not runny if need ad additional 1/2 cup flour.
  2. Fold incheese drop by tablespooonsful onto pan lined with parchment paper sprikle with paprika
  3. Bake 10 minutes turn pan bake 10 more minutes
  4. Lefover puffs can be frozen
