Ingredients:

Directions:

  1. In a bowl, beat the eggs, buttermilk, brown sugar and oil.
  2. Combine the flour, baking powder, baking soda, cinnamon and salt; add to batter.
  3. Beat on low speed for 2 minutes.
  4. Fold in oats, blueberries and walnuts if desired.
  5. Transfer to a greased and floured 10-in. fluted tube pan.
  6. Bake at 375° for 45-50 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  7. Dust with confectioners' sugar.
  8. Yield: 12-16 servings.
