Ingredients:

  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2/3 cup spelt flour
  • 1/2 cup quinoa
  • 1/4 cup sugar
  • 1 3/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 375 (350 for convection oven).
  2. Combine wet ingredients and mix well.
  3. In a separate bowl mix dry ingredients.
  4. Add dry ingredients to wet - DON'T OVER MIX - mix just until wet.
  5. Grease or line muffin tins.
  6. Spoon batter evenly into 12 cups.
  7. Bake 12-14 minutes or until toothpick comes out clean.
  8. Serve warm with butter or cool with icing.
