Ingredients:

  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup sour cream
  • 2 tsp vanilla
  • 1 tsp salt
  • 2 cups flour
  • 1/4 cup margarine
  • 2 cups confectioners' sugar
  • 3 tbsp sour cream

Directions:

  1. Cream together sugar and shortening. Add eggs and sour cream. Mix well. Add bananas and vanilla. Stir together salt, soda and flour. Add to banana mixture. Mix well. Spread dough on greased and floured jelly roll pan. Bake at 350 degrees for 20-25 minutes.
  2. To prepare icing, melt margarine over low heat until light brown and bubbly. Remove from heat and add confectioner's sugar and sour cream. Beat with mixer until creamy.
