Apricot White Chocolate Oatmeal Cookies

Ingredients:

Directions:

  1. Preheat oven to 375°F.
  2. Beat butter, sugar and brown sugar in large bowl until fluffy. Add egg and beat well.
  3. Sift flour and baking powder and salt together. Mix flour into butter/sugar/egg mixture and blend well.
  4. Stir in oats, apricots, white chocolate chunks, and pecans, if using.
  5. Using a cookie scoop, drop rounds of dough onto parchment-lined cookie sheets, 2 inches apart. Flatten slightly.
  6. Bake 9 to 11 minutes or until lightly browned; do not overbake.
  7. Cool 1 to 2 minutes on pan then remove to a cooling rack.
