Ingredients:

Directions:

  1. Preheat oven to 400 then liberally butter inside of rectangular baking pan.
  2. Mix flour and salt then use pastry cutter to lightly work in butter until well blended and crumbly.
  3. Add ice water a couple of tablespoons at a time until the dough holds together.
  4. Divide dough into 2 portions then pat into rounds and cover in plastic wrap and refrigerate.
  5. In heavy saucepan bring apricots, sugars, water and remaining butter to boil over medium heat.
  6. Boil 5 minutes stirring often to prevent sticking then remove from heat and set aside.
  7. On lightly floured surface roll one ball of pastry to pie crust thickness and cut into 1 strips.
  8. Pour half of the fruit mixture into baking pan then cover with the strips.
  9. Roll out the second ball of pastry and cut it the same way.
  10. Put remaining fruit mixture into pan then lay strips over it and bake 45 minutes.
  11. Serve warm.
