Ingredients:

Directions:

  1. Boil carrots in 3 cups water until just still crisp, drain and reserve liquid.
  2. Gently saute apple, onion, celery in butter gently for 3-4 minutes.
  3. Add curry, flour and cook an additional 3 minutes
  4. Add reserved water from carrots, lemon, tomato puree, and raisins.
  5. Bring to the boil, then simmer for 15 min.
  6. Add cooked carrots, peas, beans.
  7. Cook another 15 minutes.
  8. Add water if too thick.
  9. Serve with salad, bananas, mandarin oranges, rice, and chutney.
