Sweet Potatoes w/Goat Cheese

  2. Lbs sweet potatoes, peeled and cut into 1-inch chunks
  3. /2 tsp kosher salt
  4. /2 cup fat-free low-sodium vegetable broth
  5. Tbsp olive oil
  6. Zest and juice of 1 medium orange (or 2 tbsp fresh orange juice)
  7. /2 tsp ground cinnamon
  8. /4 tsp ground nutmeg
  9. /8 tsp ground cloves
  10. Cup plain lowfat Greek yogurt
  11. Ounces fresh goat cheese (chèvre), crumbled
  12. Instructions
  13. Place sweet potatoes in a large pot, cover by 1-inch with cold water and add kosher salt. Bring to a boil over high heat. When it boils, cover pot, reduce heat to low, and cook until potatoes are knife tender, 10 to 15 minutes more. Drain and set aside to cool briefly. (Can be done up to 5 days ahead and stored refrigerated in an airtight container.)
  14. When cool enough to handle, mix sweet potatoes with broth, olive oil, zest, juice, and spices, and turn into a 2-quart baking dish.
  15. Heat oven to broil or 500°F and arrange a rack in the upper third. Spread yogurt in an evenly layer over potatoes then sprinkle goat cheese all over the top.
  16. Broil until lightly toasted, about 1 to 3 minutes. (Watch carefully so they don’t burn.) Serve warm.
