Ingredients:

Directions:

  1. In a skillet heat the oil on medium. Add peppers and onion and cook 9-10 minutes, or until tender. Add garlic and cook 1 minute.
  2. Cut a thick slice from the stem from each tomato and scoop out the seeds and pulp with a spoon. Transfer tomatoes to a microwave safe plate and microwave for 3 minutes on high.
  3. Add tomato pulp to skillet and cook on medium high or until mixture thickens. Transfer to a medium bowl.
  4. In the same skillet, cook chicken, cumin and salt until chicken is no longer pink. Stir in tomato mixture, cheese, corn and cilantro until heated throughout.
  5. Scoop chicken mixture into tomato shells.
