Ingredients:

  • 1 cup sugar
  • 1 large egg
  • 1 3/4 cups flour
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup sugar
  • 3 drops red food coloring
  • 3 drops yellow food coloring
  • 2 tbsp orange juice

Directions:

  1. In large bowl, cream butter and sugar.add egg and orange rind.mix well.
  2. Sift together flour, salt and baking soda.
  3. Add to creamed mixture -
  4. On a floured surface, knead dough till smooth -
  5. Shape into 2 rolls about 1 1/2 in diameter.and flatten tops to make an oval shape.
  6. Wrap in waxed paper and chill overnight.in refrigerator.
  7. Preheat oven to 375* -
  8. Grease and flour a cookie sheet.
  9. Add food coloring to 1/4 cup granulated sugar.
  10. To make desired orange color.
  11. Roll dough in colored sugar and slice 1/4 thick.
  12. Arrange on cookie sheet and bake for 10-12 minutes.
  13. To prepare ICING:.
  14. Mix powdered sugar and orange juice.
  15. Brush cookies with icing -
  16. Let cool.
