Mandarin Spinach Salad with Poppy Seed Dressing

Ingredients:

  • 4 tsp sugar
  • 2/3 tsp dry mustard
  • 2/3 tsp salt , adjust to taste
  • 2/3 cup olive oil
  • 1 tbsp poppy seed
  • 1 lb spinach
  • 1/4 lb bacon , crisply cooked and crumbled
  • 1 medium avocado, sliced

Directions:

  1. Dressing: Combine all ingredients and whisk to emulsify.
  2. Salad: Combine all ingredients, drizzle with dressing, toss and serve immediately.
