Honey Oatmeal Cake

Ingredients:

  • 1 stick butter
  • 1 1/4 cup boiling water
  • 1 1/2 cup honey
  • 1 tsp vanilla
  • 2 eggs
  • 1 3/4 cup sifted whole wheat flour
  • 3/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Directions:

  1. Put oats, butter and boiling water in large bowl and let set for 20 minutes.
  2. Add honey, vanilla and eggs.
  3. Add rest of ingredients and pour into a greased & floured long pan
  4. Bake 30 - 40 minutes at 350 degrees F
  5. Excellent plain or iced with a caramel coconut frosting
