Ingredients:

  • 1 (18 oz) box yellow cake mix
  • 1 (3 1/2 oz) box instant vanilla pudding
  • 3/4 cup vegetable oil
  • 3/4 cup water
  • 1 tsp vanilla
  • 4 eggs
  • 3/4 cup chopped pecans (or 1/2 cup. walnuts)
  • 1/3 cup sugar
  • 2 tsp cinnamon

Directions:

  1. Preheat the oven to 350°F.
  2. Grease and flour a bundt pan.
  3. Mix the first 6 ingredients and beat for 5 minutes.
  4. Separately, mix the pecans, sugar and cinnamon.
  5. In the bundt pan, layer about 1/2 of the cake batter.
  6. Top with about 1/2 the pecan mixture.
  7. Repeat the layers.
  8. NOTE: If you scrape the bowl and kind of dot the batter on top of the final pecan layer, the sugar won't get as dark in the oven.
  9. Bake for 45-50 minutes.
  10. Let cool and then invert onto a plate.
