Flax Oatmeal Cookies

Ingredients:

  • 1 1/3 cups margarine
  • 1 cup splenda granular
  • 1/2 cup sugar
  • 1 1/2 cups brown sugar
  • 2 1/3 cups flax seed meal
  • 3 eggs or 1 cup egg
  • 1 1/2 tsp vanilla
  • 3 1/2 cups plain flour
  • 1 tbsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 3 cups oatmeal
  • 1 1/2 cups chopped pecans (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream together the butter, sugar, Splenda, and brown sugar.
  3. Add the flax meal and mix.
  4. In a separate bowl, beat the eggs and vanilla.
  5. Add to the flax mixture and mix together.
  6. Sift together the flour and baking soda in another bowl.
  7. Add the oatmeal, cinnamon, ginger, and nuts, and stir with the flour.
  8. Combine with the flax mixture.
  9. Form into approximately 1 tablespoon size balls.
  10. Flatten on a baking sheet and press sugar into the top.
  11. Bake approximately 10-15 minutes. until slightly brown.
  12. Cool on wire racks.
