Ingredients:

  • 1 egg white , unbeaten
  • 3/4 cup sugar
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1/2 tsp finely grated lemon peel
  • 1/3 cup chopped fig

Directions:

  1. Combine egg white, sugar, water, and lemon juice in top of double boiler, beating with mixer until well mixed.
  2. Place over rapidly boiling water, beating constantly, and cook for 4 minutes, or until frosting will stand in peaks.
  3. Remove from the boiling water and add lemon peel, almond extract, and figs.
  4. Beat until thick enough to spread.
