Ingredients:

  • 1 cup raisins
  • 1/2 cup hot water or 1/2 cup coffee
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 2 cups rolled oats
  • 1 cup brown sugar , packed
  • 1/2 cup chopped nuts (optional)
  • 3/4 cup vegetable oil

Directions:

  1. Preheat oven to 350 degrees.
  2. In a small bowl cover raisins or fruit bits with hot water(or coffee).
  3. In a large bowl mix flour, baking soda, salt, and spices.
  4. Mix in oats, brown sugar, and nuts if using.
  5. Beat eggs with fork.
  6. Add oil, undrained raisins(or fruit bits)and vanilla.
  7. Add to dry mixture and mix well until blended.
  8. Drop by teaspoons on ungreased cookie sheet.
  9. Bake for 10-13 minutes.
