  1. Filling: combine dates, sugar, and water in saucepan. Bring to boil;cook and stir until thickened, about 2 min.Cool.
  2. Beat butter and shortening with mixer 30 seconds, the add brown sugar, baking soda, salt, and cream of tartar. Beat until combined, then beat in eggs, cream, and vanilla. Beat in flour with mixer.
  3. Divide dough in half and chill 1-2 hours. Roll between waked paper into 2 13x8 rectangles. Spread each with half of date filling, then half of nuts. Roll up dough into logs, cover with plastic wrap and freeze 2-24 hours.
  4. Use serrated knife to slice rolls into 1/4 thick slices, placing 1 apart on parchment-lined cookie sheets. Bake at 325 degrees 12-15 min. until light brown on bottoms. Cool 1 min. then transfer to wire rack.
