Almost Healthy Chocolate Cake

Ingredients:

  • 1/2 cup rolled oats
  • 1 and 1/4 cups raw sugar
  • 3 tbsp dutch cocoa
  • 125 g butter
  • 1 tbsp pure vanilla
  • 60g dark high cocoa content chocolate

Directions:

  1. Prepare a cake tin 12 ins square ,with buttered baking paper to the base and sides .
  2. Heat your oven to 170 Cent .
  3. In a saucepan cook the oats in the boiling water for 5 mins
  4. Add the butter and chocolate and melt through the oats and remove from the heat.
  5. Then fold in the sugar ,vanilla and flour and stir thoroughly
  6. When cooled slightly ,add the beaten eggs and fold through mixing well
  7. Pour into the prepared cake tin and place in the pre-heated oven
  8. Cook for 30 t0 40 minutes ,checking at 30 with a skewer .
  9. Cool on a rack ,then dust with powdered icing sugar
  10. Serve with a dollop of your best thick cream .
