Vanilla Wafer Crusted Sweet Potato Pie

Ingredients:

Directions:

  1. Boil potatoes until tender then allow to cool and peel.
  2. Put potatoes in a large mixing bowl and mix thoroughly with a potato masher.
  3. Melt butter and mix with remaining ingredients except vanilla wafers.
  4. Arrange vanilla wafers in bottom and up sides of pie plate.
  5. Pour potato mixture over cookies then bake at 375 for 40 minutes.
