lovely lower fat cheese spinach quiche, i have tweaked this recipe for less fat ), sliced mushrooms, chopped onion, frozen chopped spinach, thawed, drained well, low fat milk, eggs, low fat shredded mozzarella cheese, frozen prepared pie shell, oscar mayer low fat real bacon bits (optional), preheat oven to 375 degrees f., spray nonstick skillet with cooking spray ., add mushrooms and onion; cook 5 min. or until tender., stir in spinach; mix well ., add seasoning, (if needed ), mix milk and eggs until well blended., add spinach mixture and cheese., pour into pie shell ; sprinkle with bacon bits., bake 50 min . or until set and golden.
