Red Cabbage and Fruit Slaw

Ingredients:

  • 1/3 cup dried apricot , cut into thin matchstick strips
  • 1/3 cup apple , cut into thin matchstick strips
  • 1/2 cup mayonnaise
  • 1 1/2 tbsp sugar

Directions:

  1. In large bowl, combine savoy cabbage, carrot, apricot and apple and mix well.
  2. In small bowl, mix mayonnaise, sugar and vinegar.
  3. Pour over cabbage mixture and mix well.
  4. Refrigerate at least 1 hour before serving.
  5. Just before serving, mix in red cabbage.
