Ingredients:

  • 8 slices of bacon cut into pieces
  • 1 lb. smoked sausage cut into bite size pieces
  • 2 -3 potatoes boiled till just tender cut into cubes
  • 8 oz. cheddar grated (or any cheese you want)
  • a good dollop of sour cream
  • salt and pepper to taste.

Directions:

  1. Heat a large fry pan over medium heat add bacon and fry with the onion and pepper and smoked sausage remove to bowl
  2. Drain all but 2 T of the bacon fat
  3. Fry the potatoes in the bacon fat till nicely browned
  4. Crack eggs in a bowl and whisk add the sour cream and salt and pepper whisk till the mixture is smooth
  5. Add the eggs to the fry pan with the potatoes add the bacon onions pepper and sausage back to the fry pan when eggs are scrambled to your consistency add the cheese and let it melt stiring till it is
  6. Put in a Bowl and serve imediately with buttered toast or biscuits
  7. Enjoy
