Secret Ingredient Chocolate Chip Cookies

Ingredients:

  • 1/2 cup regular rolled oats
  • 2 1/4 cups flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1 cup butter
  • 3/4 cup packed brown sugar
  • 3/4 cup white sugar
  • 2 tsp vanilla
  • 2 eggs
  • 1 1/2 cups chopped walnuts

Directions:

  1. Preheat oven to 350.
  2. Cover 2 cookie sheets with parchment paper.
  3. Place rolled oats in food processor.
  4. Or blender and process till finely ground( if using quick oats you can skip this part).
  5. Combine the 1st 5 ingredients in mixing bowl.
  6. In another bowl cream the butter sugars vanilla and lemon juice with your mixer.
  7. Add the eggs and beat till fluffy.
  8. Stir the flour into the fluffy mixture.
  9. With wooden spoon blending well.
  10. Add the chocolate chips and nuts mix well.
  11. Using a 1/4th cup dough for each cookie.
  12. ( I use a ice cream scoop) place 2 1/2 inches apart on your prepare baking sheets.
  13. Bake 16 to 18 minutes or until lightly browned.
  14. Cool on wire rack.
  15. Store in a tightly covered container.
  16. To keep them soft and chewy.
