shanghai noodles (or udon noddles), cashews, red curry paste, vegetable oil, garlic cloves (minced ), coconut milk, water (omit if using lite coconut milk), lime (zested & juiced), brown sugar, fish sauce (omit for vegetarian), bok choy (chopped ), carrot (julienned), basil leaves (fresh & torn)
