steak fillets (nice thick cut ones .), onions, sliced thinly, brandy, beef stock granules, french creamy mustard, garlic powder, double cream, light cream, cornflour, pepper, fresh tarragon, chopped finely (i did a generous tbsp it was not quite 11/2 but a little over 1.), lemon juice

beef steak fillets (i am guessing mine were about 250g a piece so whatever weight you prefer, just note that cooking tim), cracked black pepper, olive oil, shallots, sliced thinly, garlic cloves, crushed, bourbon, water, beef stock granules (depending on brand you use), french mustard (not quite as strong as a dijon), cream, cornflour (depending on how thick you like your sauce)
