Ingredients:

Directions:

  1. Heat oil in pot on medium heat.
  2. Add onion and garlic and saute until soft.
  3. Add cauliflower and chicken stock. Cook the cauliflower until it is tender, about 15 minutes.
  4. Using a hand blender, puree cauliflower until it reaches desired consistency.
  5. Add parmesan, salt, and peper.
