1. Add these ingredients to rice. Before removing the rice from heat, sprinkle it with the tomatoes and parmesan. Fold in the basil before serving.
2. For Foolproof rice, in a medium saucepan, combine 1.5 C water, 1 C long grain rice, and .5 t salt. Bring to a boil. Stir once, reduce heat to low, cover, and simmer until the water is absorved and the rice is tender - about 18 min. Remove from heat and let stand, covered for 5 min. Fluff and fork.
