  • 6 sweet potatoes (about 2 1/2 lb.)
  • 2 tsp sugar
  • 1/2 tsp salt
  • 1/8 tsp black pepper

  • 1 Peel potatoes; cut each potato lengthwise into quarters.
  • 2 Put the potatoes in a large bowl; coat with cooking spray.
  • 3 Combine the remaining ingredients; sprinkle over potatoes, tossing well to coat.
  • 4 Arrange potatoes, cut sides down, in a single layer on a baking sheet.
  • 5 Bake at 500° for 10 minutes; turn wedges over.
  • 6 Bake for 10 more minutes or until tender and beginning to brown.
