spanish chorizo sausages , quartered lengthwise and chopped, spanish smoked paprika (optional), onions, peeled and chopped, bell peppers, chopped (capsicum), corn on the cob, cooked , kernels removed and roughly chopped (i add this only when i have corn leftover from the night before), limes , juice of, taco sauce (i use medium heat ), sour cream (or more ), lettuce, shredded (or more ), colby cheese, shredded (or any cheese you prefer), kalamata olive, pitted and chopped roughly (optional), flour tortillas

jumbo shrimp, peeled , devained and tails removed (jumbo is key for this dish, approximately 12-16 shrimp, depending on the size), links spanish chorizo (not mexican , which is the soft chorizo, spanish is the hard cured chorizo, you will get 5-6 slices p), pearl onions (1 box of frozen works great for this, it has approximately 16 onions), spanish olives (you could also use black olives if you prefer), fresh mozzarella ball (optional), italian salad dressing (i just use bottled , but you can always use a homemade dressing if you want), salt, pepper
