4 puy soup bacon Recipes

smoked ham houghs (or hocks) - in scotland we pronounce it hochhhhs (using a very guttural germanic sound). i use simon howie houghs which are very smoky indeed., bay leaf, black peppercorns, a couple of ham stock cubes. i use knorr s, smoked bacon, chopped fine (i use oscar meyer s streaky), carrots, very finely chopped, onions,very finely chopped, celery stalks, very finely chopped, puy lentils, well rinsed (no need to soak), chopped tomatoes, garlic, crushed, savoy cabbage (the very dark green curly outside leaves), shredded finely, red lentils, well rinsed, a bunch of fresh curly parsley, finely chopped

olive oil, onions, finely chopped, garlic cloves, minced, celery ribs, sliced, bacon , cut into 1/4 inch strips crosswise, lentils (lentilles de puy, small green french ), diced tomatoes, vegetable stock, thyme, bay leaves, sea salt and pepper

olive oil or 2 tbsp unsalted butter, yellow onions, thinly sliced (or 1 spanish onion), celery ribs, trimmed and thinly sliced (save the leaves from 1 stalk), carrot, trimmed, peeled, and thinly sliced, chicken broth or 6 cups vegetable broth, french green lentil, rinsed and picked over (lentils du puy), orange peel , about 1 x 2 inches, white pith removed and cut into 3 pieces, black peppercorns, coriander seeds, whole clove (the spice , not garlic), fresh ginger, peeled and coarsely chopped (1-inch piece), salt, fresh ground pepper, yogurt, for topping, chopped cooked bacon, for topping (or lardons)
