hot breakfast sausage, diced sweet onion, diced green chilies, diced jalapeno peppers , seeds removed, ingredients : diced tomatoes, sauteed green peppers and/or mushrooms, mexican blend grated cheese, eggs, milk, flour, tastefully simple fiesta party dip mix , or a tsp taco seasoning mix, optional, a little garlic powder , red pepper flakes, cumin for seasoning (any or all are optional)

raw mexican chorizo(if in links , remove from casing)...i made my own, using this recipe: mexican chorizo de puebla, melted butter, red onion, or 1/2 large, diced, heavy cream or half and half, milk, eggs, canned(or fresh, sauteed with the meat , onion and garlic) green chilis or jalapenos, diced, crusty bread , day old is preferred, torn or cut into 1/2 inch pieces, cojack or monterey jack cheese, shredded, cotija or other mexican crumbly cheese, grated, kosher or sea salt and fresh ground pepper, fresh cilantro for garnish
