grated queso blanco (or a mixture of queso blanco and monterrey jack), mayonnaise, cooked shrimp , coarsley chopped, minced green onion, chipotle chile in adobo, pureed and strained (i really like jalapenos for this, too), chopped fresh cilantro, grated lime zest, ground cumin, salt , to taste, fresh ground pepper , to taste, grated cotija cheese, flat tortilla chips, fresh cilantro leaves (i just chop mine)
