Ingredients:

Directions:

  1. Preheat oven to 350 degrees. Spray a 10 tube pan with baking spray with flour;set aside
  2. In large bowl,combine 3 c flour,baking powder and salt;set aside.
  3. In a lg. bowl,beat butter and sugar at med. speed with electric mixer until fluffy. Add eggs,one at a time,beating well after each addition
  4. Add flour mixture to butter mixture alternately with buttermilk,beginning and ending with flour. Add flavor and extracts combining well. Beat at med. speeduntil well combined and creamy. Set aside
  5. Toss peaches with remaining 1/4 c flour to coat thoroughly. With mixer running at lowest speed,add peaches to batter,blending just enough to incorporate.
  6. Bake till cake is golden brown and wooden pick inserted in center comes out clean.,1 hour to 1 hour 25 mins. dueing last 20 mins of baking time,cover top of cake with aluminum foil to prevent excess browning,if desired.
  7. Remove from oven,let cool in pan 15 mins. Invert cake onto cooling rack,and let cool completely before slicing.
