  • 4 large potatoes, grated and either pressed between layers of paper towel or place in a sieve and press any liquid out.
  • 1 medium onion , finely grated on a box grater or a rasp, which takes forever
  • note: you can add 1 whole beaten egg or for lighter latkes, you can beat 2 egg whites until there are peaks and fold them into the mixture.
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt (optional)
  • note: if you want something a little different then grate half a medium zucchini or add a minced garlic clove and i sometimes like to add a pinch of cumin.

  • 1 Peel and coarsely grate the potatoes.
  • 2 I like to drain my grated potatoes.
  • 3 Mix potatoes and onion with the beaten egg. flour, garlic powder and salt.
  • 4 Drop teaspoon size pancakes into HOT vegetable oil.
  • 5 Brown on both sides.
  • 6 Serve with sour cream and applesauce.
  • 7 Makes approximately 20-25 small latkes.
