1. In a large bowl, combine potatoes, red pepper, onion, garlic and thyme; toss well to coat.
2. Pour veggies into shallow roasting or jelly roll pan.
3. Bake in 425°F oven, turning frequently, for about 40 to 45 minutes or until veggies are soft and golden brown.
4. Drizzle with vinegar.
5. Season with salt and pepper.
6. Excellent with candied walnuts thrown in.
