1. Place chicken breasts between 2 sheets of clear plastic wrap and pound to flatten to 1/4 thick. Remove plastic.
2. Sprinkle each brast with salt and place green onion and parsley on it. Place butter piece at end of each chicken breast and roll jell-roll style, pressing ends to seal. Secure with a toothpick.
3. Beat egg and water. Dip breasts in flour, then egg and water mix, then bread crumbs. Chill 1 hour. Deep fry 5-10 minutes until brown.
