  • 10 crepes
  • 3/4 cup almonds
  • 2 tbsp water
  • 1/2 cup maple syrup

  • 1 Put almonds into a food processor and grind until very fine.
  • 2 Add water and blend into a smooth paste.
  • 3 In a medium bowl, mix ground almonds with ricotta cheese, maple syrup and almond extract.
  • 4 Put 1/3 cup filling across the middle of each crepe. If desired, sprinkle with fresh fruit.
  • 5 Roll each crepe up. Bake 10 minutes at 375 in a buttered 9 by 12 inch baking dish.
