1. Adjust oven to lower-middle position and heat oven to 350 degrees.
2. Mix flour, 1/4-cup confectioners sugar and lemon (zest and juice). Add butter and vanilla and mix with hands to form a dough.
3. Drop cookie dough by generous tsps onto a parchment-lined cookie sheet. Bake until cookie bottoms are golden brown, about 15 minutes. Transfer cookies to a wire rack to cool completely.
