  • 1 Preheat oven to 180 C.
  • 2 Grease and line the bottom and sides of cake tin with a layer of baking parchment.
  • 3 Beat butter until creamy.
  • 4 Add sugar and beat until fluffy and light.
  • 5 Beat in the eggs gradually.
  • 6 Sift flour and baking powder in another bowl.
  • 7 Add coconut and grated rind of lemon.
  • 8 Add flour in creamy mixture.Beat until smooth.
  • 9 Add milk and mix well.
  • 10 Spoon the mix into the prepared tin .
  • 11 Sprinkle some cocunut on top and bake for 30 mins or until pale golden.
  • 12 Cut into slices &serve.
