  • 2 Grease 19x9cm loaf pan.
  • 3 Beat butter and sugar until creamy.
  • 4 Beat in eggs one at a time until fluffy.
  • 5 Combine jam and buttermilk.
  • 6 Sift together flour and mixed spice with salt.
  • 7 Using wooden spoon add flour mixture alternatively with the liquid to butter mixture, beating until combined after each addition.
  • 8 Spoon batter into prepared tin.
  • 9 Bake 50 minutes.
