  • 1 Preheat oven to 350°F.
  • 2 Pierce sweet potatoes all over with fork.
  • 3 Place potatoes on rimmed baking sheet.
  • 4 Roast until potatoes are very soft, about 1 hour 45 minutes.
  • 5 Remove potatoes from oven and let stand until cool enough to handle. Peel potatoes and place flesh in mixing bowl; add butter.
  • 6 Using electric mixer, beat until mixture is fluffy and smooth.
  • 7 Mix in 2 tablespoons honey.
  • 8 Season to taste with salt and pepper and more honey by teaspoonfuls, if desired.
  • 9 Transfer sweet potatoes to serving bowl.
  • 10 Garnish with Parsley
