  • 1 Combine wine, vinegar, sugar, garlic, green onion, red pepper and red pepper flakes in 8 cup microwaveable casserole.
  • 2 Cover; microwave on high for 3 minutes or until mixture is simmering.
  • 3 Add mushrooms.
  • 4 Cover; microwave at high 6 minutes or until mushrooms are tender but not mushy.
  • 5 Stir partway through cooking.
  • 6 Stir in salt, oregano and pepper.
  • 7 Let stand, covered, for 30 minutes.
  • 8 Transfer to covered jar or container.
  • 9 Refrigerate up to 1 week.
