1. Preheat oven to 350 degrees.
2. Spray a 9X13 casserole dish with cooking spray.
3. Beat the eggs in a large bowl.
4. Salt and pepper to taste.
5. Whisk in the evaporated milk, chiles, hot sauce and chese.
6. Bake for 45 - 50 minutes until set and brown on the edges.
7. Let sit 10 minutes before serving.
