1. Heat oil in pan, and sautee raw veggies.
2. Beat eggs and egg whites.
3. Add remaining ingredients and mix well. Cool veggies slighlty and mix in to egg mixture.
4. Pour into baking dish sprayed with non-stick cooking spray.
5. Top with thinly sliced tomatoe.
6. Bake 400 for 15 then reduce temp to 350 for an additional 20-35 minutes (depending on thickness in pan).
