  • 1 cup chocolate wafer crumbs
  • 2 tbsp sugar
  • 2/3 cup sugar
  • 3 large eggs
  • 1 tsp vanilla
  • 3 large egg whites

  • 1 Combine crumbs, butter and sugar then press into bottom of spring form pan.
  • 2 Bake at 350 for 10 minutes.
  • 3 Combine cream cheese and sugar and mix at medium speed until well blended.
  • 4 Add eggs one at a time mixing well after each addition.
  • 5 Blend in melted mint chocolate and vanilla then pour over crust.
  • 6 Bake at 350 for 50 minutes.
  • 7 Loosen cake from rim of pan and cool before removing rim of pan.
  • 8 Chill.
  • 9 Beat egg whites until soft peaks form.
  • 10 Gradually add marshmallow crème beating until stiff peaks form.
  • 11 Carefully spread over top of cheesecake to seal.
  • 12 Bake at 450 for 4 minutes or until lightly browned.
