Chocolate Cupcakes Filled With Peanut Butter Cups

Ingredients:

  • 3/4 cup butter or 3/4 cup margarine
  • 1 1/3 cups granulated sugar
  • 4 large eggs
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 12 miniature peanut butter cups

Directions:

  1. Preheat oven to 350°F.
  2. Line muffin pan with baking cups.
  3. Melt chocolate and butter together.
  4. Stir in vanilla extract.
  5. In a separate bowl combine sugar, unbeaten eggs, flour, baking powder and salt.
  6. Stir in chocolate mixture.
  7. Fill muffin cups half full.
  8. Place peanut butter cup in center of each and top with remaining batter.
  9. Bake 20-25 minutes or until a wooden pick inserted in the center comes out clean.
