  • 1 Beat chicken to 1/2 inch thick.
  • 2 Sprinkle chicken w/salt and pepper.
  • 3 Heat oil in a large nonstick skillet over medium heat.
  • 4 Add chicken to oil and cook 6 minutes on each side.
  • 5 Remove chicken from pan and keep warm.
  • 6 Add garlic to pan and cook 1 minute.
  • 7 Add broth and herbes de provence and bring to a boil and deglaze.
  • 8 Cook until broth mixture is reduced to 1/2 cup, about 3 minutes.
  • 9 Remove from heat.
  • 10 Add butter and lemon juice to pan stirring until melted.
  • 11 Serve sauce over chicken.
